Brilliant ruby red in colour, the 2015 Heathcote Shiraz delivers aromas of raspberry coulis and mulberry with seamlessly integrated oak in support. The wine expands further in the palate revealing succulent layers of mulberry, ripe damson plum, cherry cola and complex mineral notes. Firm but focussed tannins provide length and persistence and ensure that the wine will continue to improve with careful cellaring.


VINTAGE
Timely rainfall at budburst ensured vines had a healthy start to the growing season following yet another dry winter period. January and February mean temperatures were slightly above average with rainfall close to median values. The warm summer conditions, moderate crop levels and healthy canopies lead to harvest commencing three weeks ahead of long term norms.


WINEMAKER COMMENTS
Heathcote has recently emerged as one of Australia’s most exciting wine regions in Australia owing to its capacity to produce powerful, long lived Shiraz. As a close neighbour to Mitchelton, the Heathcote region offers an opportunity to further explore the individual nuances that make Central Victoria one of our most diverse wine regions.
Sourced from the rich Cambrian soils of the Mount Camel Range, each parcel is vinified in small open fermenters and is gently hand plunged twice per day over the duration of the ferment. Upon completion of primary fermentation the wine is allowed to remain on skins for up to two weeks to provide further complexity and balance of tannins. The wine is then allowed to mature in new and seasoned French oak barriques for up to 16 months before the final blend is assembled.

Angus fillet, served with potato soufflé, beetroot puree and a red wine jus.
