2018 VICTORIA SERIES CABERNET SAUVIGNON
A generous core of ripe blackcurrant fruit with dark chocolate and black olives with a touch of dried herbs adding to the aromatics. The palate is varietal and generous, with lovely synergy between the fruit and tannins. A medium bodied wine with generosity of length and flavour.
A warm and relatively dry growing season leading into harvest delivered excellent vine health with fresh canopies and well balanced crop levels. These idyllic conditions allowed a gradual accumulation of natural sugars and a correspondingly slow degradation of acids. The elegant, balanced and perfumed flavour profile is a wonderful hallmark of the vintage.
Fruit for the Victoria Series Cabernet Sauvignon is sourced from premium vineyards in Central Victoria. The fertile soils on the sun drenched banks of the Goulburn River provide the ideal site for the production of generously structured Cabernet Sauvignon. Upon harvesting, fermentation is conducted over a three week period with the focus on measured extraction to create a structural yet appealing style. The wine is then matured for up to 6 months before the final blend is carefully assembled.
