2017 VICTORIA SERIES CABERNET SAUVIGNON
A generous core of dark red cherries, plums and blackcurrant fruit with a touch of dried herbs adding to the aromatics. The palate is seamless and generous, with lovely synergy between the Merlot fruit and Cabernet tannins. A plush medium bodied wine with generosity of length and flavour and vibrancy on the palate.
A vintage that started with much higher than average winter and early spring rainfall. A cold and long winter, delayed budburst, setting up a moderate to later harvest from the beginning. Frequent spring rainfall, kept us on our toes and late but even flowering. The growing season settled down and became quite benign after New Years day. A warm January and February and the weather stayed pretty stable through harvest, meaning physical fruit quality was top notch with high natural acidity and cooler year characters and flavours.
Fruit for the Victoria Series Cabernet Merlot is sourced from premium vineyards
in Central Victoria. The fertile soils on the sun drenched banks of the Goulburn River provide the ideal site for the production of generously structured Cabernet Sauvignon and ripe, juicy Merlot. Upon harvesting, fermentation is conducted over a two week period with the focus on measured extraction to create a round and juicy style. The wine is then matured for up to 8 months before the final blend is carefully assembled.
