2016 MITCHELTON CHARDONNAY
Pale gold in colour. Fragrant aromas of nougat, roasted cashew and citrus blossom fill the glass with toasty oak and biscuity lees characters woven throughout. The palate opens up fine and delicate, a medley of stonefruits with a suggestion of preserved lemons. Balanced oak and crisp acidity add length and complexity.
A mild and relatively dry growing season leading into harvest delivered excellent vine health with fresh canopies and well balanced crop levels. These idyllic conditions allowed a gradual accumulation of natural sugars and a correspondingly slow degradation of acids. The refined, elegant and perfumed flavour profile is a wonderful hallmark of the vintage.
Chardonnay is a remarkably versatile grape that lends itself to a multitude of winemaking techniques and stylistic expressions. After a short settling period, the juice is rough racked to a mix of new and seasoned barrels with elevated levels of solids aimed at enhancing texture and complexity in the final wine.
Upon inoculation with a blend of selected yeasts, fermentation proceeds over a period of 7 - 10 days at moderately warm temperatures. Lees stirring is employed post fermentation to provide further complexity and texture throughout the 9 month maturation period. Individual barrels are selected for the final blend.
Pair this wine with a full flavoured dish of fresh white flesh seafood or chicken, compliemented by a creamy, garlic, basil sauce.
